I wracked my brains over the past couple of days trying to find something to give away to a successful Meal Planning Month participant that did not cost me anything, but was a worthy prize. And I did it! Second prize for someone who sticks to their meal plan this month AND blogs about it at least once a week will be a lovely, never used, in the box, stainless steel kettle. Mr W and I received two of these for our wedding, and the second has sat in a box unused for 2 years now. It is quite nice, I would like someone to get some use out of it.

Last night I made homemade macaroni and cheese. I hadn't made this in awhile, but it was very good. The recipe was my grandmother's and it reminds me of her every time I make it. I even have one of her old casserole dishes which I make it in. Here is the recipe (adjust portions accordingly):

Cook the macaroni noodles until al dente. Put about half the noodles in the bottom of your pot. Sprinkle grated cheddar on top (you decide how cheesy to make it). Top layer with ketchup. Add the remaining noodles on top and repeat with the cheese and ketchup. Beat one egg and some milk (as if you were making scrambled eggs) together. Pour this overtop the noodles. Put the lid on the dish. Bake at 375 for about 45 minutes. If you like a crispy top remove the lid for the last 15 minutes. I cut up some veggies to go with the macaroni and cheese for a fairly easy dinner.

Tonight Mr W comes home from up north. I am not sure if he will be here for dinner or not though so I have a couple of options. If he is going to be home in time I have a small roast to cook, along with leftover mac & cheese, yams and broccoli. If not, I am going to keep it simple and eat leftover macaroni, and leave the roast for tomorrow night. If we eat the roast tonight I have some fresh snapper to make fish tacos tomorrow… yummmm.

    Great mac and cheese recipe - I'll try it after my current menu plan is over in 3 weeks.
    I had a nerve-wracking moment today: I got absorbed in my work, forgot to make a supper, and left the house ... and realized, oh horrors, that on Day 3 I would have to admit defeat and eat out. And thanksbetogotte, of all things, a friend I was meeting (a wonderful gay man) inexplicably brought a homemade supper to our meeting, specifically for me! I couldn't believe it!! So, my _____ is saved.

    good luck on this menu planning month, I will be watching and hoping for inspiration, I am really hopeless at menu planning so I didn;t enter but I hope to pick up some tips.
